Changing My Tune

So I have been throwing myself a pretty big pity party lately.  We've had a lot of unlucky things happen recently, so I had come to conclude that Joey and I are the most unlucky couple in the world.  We had that issue with my teeth, we had some plumbing problems that ended up being more serious and costly than we originally thought (of course), Joey's battery on his truck died and he also needs some more stuff done to it that will cost even more money, both tires on the boat trailer blew out and had to be replaced, we had a serious leak in one of our bathrooms (which lead to the remodel), and we can't keep one of the most hearty trees you can have - a crape myrtle - alive.  So I've been feeling sorry for myself for the past week or so, which is not a becoming characteristic if I say so myself.  Anyway - I was thinking on Friday, what better way to make myself feel better than cake.  So today, I decided that no ordinary cake would do, I was going to make a three layer strawberry cake from scratch, with a cream filling from scratch, and cream cheese icing from scratch.  Granted, I have only made one cake by myself from scratch before, but I come from an extended line of great cooks so some of that had to have been passed down to me.  By the way, the one cake I made - a pound cake - didn't turn out so well, but my luck has to turn around sometime, so this cake has to come out perfect, right?  Wrong.

It started out great, I did everything as directed for the batter and it tasted wonderful.  After cooling in the pans, I needed to transfer to a cooling rack.  Easier said than done.  One came out perfect, another came out semi-perfect but nothing that would ruin my cake, the other one wouldn't come out at all.  It fell into about fifteen different pieces.  Fine - no biggie, a two layer cake will work just fine!  Then I made the filling and the icing, both of which tasted sinfully delicious.  The filling worked fine, now on to the last piece - the icing.  Something went haywire here, the icing wasn't thick enough and was just falling everywhere, there was way too much of it, I couldn't get it smooth, and after getting it to where I thought I could live with it, the cake fell apart.  Freaking fell apart.  I didn't even get to take a picture of the finished cake before it just fell apart.  I don't know what went wrong, but again I am the most unlucky person in the world, so it was bound to happen.

After all the commotion, Joey ventured in.  He saw the catastrophic cake but didn't laugh.  He tasted part of it that fell apart and said it tasted great.  He looked at what was left over and said it looked great.  Granted, I know he was lying about it looking great, and he can't even taste, but with him just saying that, it made me change my tune.  I am not the most unlucky person in the world - I am pretty damn lucky.  I have wonderful friends and family, a great house and job, the cutest puppy in the world, and a GREAT husband!

PS - Here is a picture of the tragic cake.  Practice makes perfect though, so hopefully the next one will be better!

  3. Nat - cake still looks delicious!! Remember, ppl don't order / eat cake because it's pretty :) Sorry 'bout your run of bad luck & glad to hear that it's not keeping you down!

  4. ok kid - you must remember that the best 'tasting' cakes are never pretty!! and even though you guys have had some 'things' happen lately - glad you realized that life isn't measured in things but in blessings that no dollar amount can be put on - you do have a nice home, job and great husband and we love you very much! remember how much God has blessed you! we always learn more in the valleys than on the mountain top -- love you baby girl!
